## What Bib Gourmand actually means

The Michelin Guide’s Bib Gourmand category recognises restaurants offering good quality food at moderate prices. It’s not a lesser star — it’s a different measure, and in a city like Chiang Mai it’s far more useful than the starred list.

What it identifies here is mostly what locals already knew: family-run shops and market stalls doing one thing extremely well for decades. This guide sits under our

## What to expect

Set your expectations correctly and these are among the best meals in Chiang Mai.

**The venues are plain.** Plastic chairs, melamine plates, a fan rather than air conditioning, a cook working at the front. The listing changes nothing about the room.

**The menus are short.** Most listed places do one dish, or a handful. That focus is why they’re listed.

**Prices are low.** Frequently under 100 THB a dish; rarely above 250 THB.

**The queues are real.** Listing generates traffic. A shop that had a five-minute wait now has twenty at peak times.

**Hours are limited.** Many are lunch-only, or close when the day’s batch is finished.

## What Chiang Mai’s listings cover

The categories that recur in and around the city:

| Type | What you’ll find |
| --- | --- |
| Khao soi shops | The city’s signature dish, done to a very high standard |
| Northern Thai restaurants | Full Lanna spreads — nam prik, gaeng hang lay, sai oua |
| Noodle specialists | Khanom jeen nam ngiao, boat noodles, single-dish operations |
| Grilled meat and som tam | Isaan-influenced, often with a long-established following |
| Modern Thai kitchens | A smaller number doing contemporary work with northern ingredients |

Because the guide’s selections are revisited annually and vendors occasionally move or close, treat any specific list as something to verify before travelling across the city.

## How to use the list well

**Order the signature dish.** These places are listed for one thing. Order that thing, not the item that sounds most interesting to you.

**Go early.** Before noon for lunch places, before 6pm for evening ones. The queue and the sell-out risk both compound.

**Bring cash.** Small notes. Many take QR payment; not all.

**Don’t linger.** These are high-turnover operations with people waiting. Eat, pay, free the table.

**Accept the room.** If you want ambience, the guide’s starred restaurants are a different proposition. Bib Gourmand is about the plate.

## The honest caveat

A Michelin listing is a useful filter, not a ranking of Chiang Mai’s food. The guide visits a subset of the city’s thousands of eateries, and its selections skew toward places that can absorb the attention.

Some of the best food in Chiang Mai is at unlisted neighbourhood shops that no inspector has ever visited. The list is a good starting point for a visitor with limited days, and a poor substitute for exploration if you live here.

Use it as one input. Then eat where the queue is, whether anyone gave it a plaque or not — our

Got questions?

## Common questions

Are there Michelin restaurants in Chiang Mai?

Yes. The Michelin Guide covers Chiang Mai and includes both starred restaurants and a longer list of Bib Gourmand entries — the category recognising good food at modest prices. The Bib Gourmand list is where the interesting eating is for most people.

Is Bib Gourmand expensive?

No, that's the entire point of the category. Bib Gourmand recognises quality at a modest price, and in Chiang Mai that frequently means a stall or a family restaurant where a meal costs under 200 THB. Several listed places serve dishes at street-food prices.

Do I need to book?

Most Bib Gourmand entries in Chiang Mai are walk-in stalls or small restaurants that don't take bookings. Go early, particularly at lunch. Listing brings queues, and the popular ones sell out.
